Go-to green juice

This is a quick and easy green juice that I love drink to start my day on the right foot.

Ingredients: 3 large organic cucumbers (unpeeled) or conventional cucumbers (peeled), 4 stalks organic celery, handful of fresh parsley, 1 organic green apple, small chunk of fresh ginger (optional), juice from one lemon.

Run the cucumbers through your juicer, followed by the celery (I tuck the parsley stalks between two pieces of celery-it seems to go through the juicer more easily), the apple, and the ginger, if using.  Stir in lemon juice.  Enjoy!

Chia Seed Pudding

1 cup almonds
½ cup chia seeds
3 tablespoons honey or maple syrup
Dash ground cinnamon
1/2 tsp. vanilla extract

Blend almonds with 3 cups water until creamy and smooth.  Add chia seeds, honey, vanilla, and cinnamon and pulse until just mixed.  Pour into bowl and chill for an hour or more. Will keep up to 3 days.  Great as is or topped with fresh fruit.

*Chia seeds are a good source of fiber, calcium, and omega-3 fatty acids, which are essential fats your body does not make, but needs to function properly.

In seven-teaspoons of chia seeds there are 11 grams of fiber.  That’s the U.S. Department of Agriculture’s recommended daily allowance of fiber. Compare that to a bowl of oatmeal, which has about 3 grams of fiber, or a slice of whole-wheat bread, which has about 5.
