Mango Avocado Salad

Take something special to the next picnic!

This is such a great change from the standard lettuce salad! It’s an unusual combination of ingredients, but you’ll be surprised how well the flavors compliment each other. Prepare just before you’re ready to serve.

Salad
3 Mangoes, diced into cubes (I love the champagne or yellow mangoes)
3 Ripe Avocados diced into cubes
1-2 Cucumbers, peeled and seeded and diced into cubes
2 jalapeno peppers, minced (use just a small amount of the seeds – that’s where the heat is)

Dressing
1/4 cup sesame oil
4 tablespoons freshly squeezed lime juice
1 tablespoon coconut sugar or agave nectar
1 1/2 tablespoons sesame seeds (the black ones make a nice presentation)
pinch of sea salt

Put lime juice, sweetener, sesame seeds and salt in a bowl. Slowly pour in sesame oil, whisking constantly until blended. Toss with salad ingredients and serve immediately. Serves 6.
