Creamy, Dreamy Raw Almond Hummus

This is a great cocktail party snack that’s a twist on traditional hummus!

2 cups raw almonds, soaked 12-18 hours
1/4 cup tahini
1/2 cup olive oil
1/3 cup fresh lemon juice
3/4 cup water
1 small glove garlic, chopped
1 tsp salt
1 tsp cumin
twist of freshly ground pepper

Rinse and drain the soaked almonds. Grind in a food processor until crumbly. Add remaining ingredients, except water. Begin processing and slowly add water through the chute until the hummus is creamy. You may need to stop the food processor and scrap down the sides of the bowl. Taste and adjust for seasoning.

Serve with cucumbers, carrots, celery, and flax crackers.
